Healthy Lunches

Note...Any of the leftover's from the dinner recipes would be great as a lunch spinach salad, loaded with vegetables. Easy, and they are already made.

Tuna Sandwich
1 Can of Tuna
1 T Light Mayo or Miracle Whip
2 Whole Wheat pieces of bread/or Romaine lettuce for a wrap
Veggies (sprouts, lettuce, tomato)

Mix mayo and tuna and eat on sandwich.
*I always toast my bread...it just makes it better :)  Also sometimes I use only one piece of bread and load the tuna on top and then eat most of the leftover tuna.

Salad's-I always use Spinach...or a Romaine/Spinach mix

Some tips for grocery shopping for your salad:
-Lean Protein (leftover dinner recipe meat, tuna, beans)
-Laughing cow cheese (they have different flavor choices)
-Veggie's of choice (carrots, broccoli, cauliflower, peppers, tomatoes)
-Strawberries, blueberries
-Litehouse Poppyseed dressing (found in the refrigerator section in produce) is my go to dressing, if I do not have any that I have made from scratch.
-Sometimes I need a crunch, so I will crumble up a couple of Corn Tortilla Chips and put them on top.
-Cottage Cheese
